Full job description

Main ResponsibilitiesSection Management

  • Manage one assigned kitchen section
  • Prepare and present dishes according to cruise line recipes and standards
  • Ensure consistency in taste, portion size, and presentation

Supervision

  • Supervise commis chefs and junior kitchen staff
  • Assign daily tasks and monitor performance
  • Train and guide staff in proper cooking techniques and hygiene standards

Food Production

  • Prepare high-volume meals for guests and crew
  • Maintain quality during busy service periods
  • Follow standard recipes and plating guidelines

Stock and Inventory

  • Monitor stock levels within your section
  • Assist with ordering and receiving ingredients
  • Control waste and maintain cost efficiency

Hygiene and Safety

  • Follow strict HACCP food safety standards
  • Maintain cleanliness of all work areas
  • Comply with cruise ship safety procedures and drills

Cruise Ship Working Conditions

  • Long working hours, typically 10–14 hours per day
  • Rotational shifts and extended contracts at sea (usually 6–9 months)
  • High-volume production for large numbers of passengers

Pay: R14 000,00 - R20 000,00 per month
