Position: Hotel Manager

Location: Onsite – Cape Town CBD

Reporting To: Executive General Manager

About the Role

We are seeking an experienced, commercially minded, and service-driven Hotel Manager to take full ownership of the hotel's day-to-day operations while delivering an exceptional guest experience. Reporting directly to the Executive General Manager, the Hotel Manager is accountable for the overall operational performance of the property, ensuring all departments including Front Office, Housekeeping, Maintenance, Food & Beverage, Events, and support functions operate efficiently, profitably, and in alignment with the hotel's strategic objectives.

The Hotel Manager will provide visible leadership across the business, maintaining a strong presence throughout the property and ensuring a complete understanding of operational performance, guest feedback, team engagement, service standards, and commercial results across all departments.

This role requires a hands-on leader who can inspire high-performing teams, hold department leaders accountable, make sound commercial decisions, proactively resolve operational challenges, and drive a culture of ownership, accountability, continuous improvement, and service excellence.

Key Responsibilities

Leadership & Team Management

  • Take full ownership of the hotel's daily operations, ensuring all departments consistently achieve operational, service, and financial objectives.
  • Provide visible leadership across all areas of the hotel, including restaurant and Food & Beverage operations, ensuring alignment with hotel standards and business goals.
  • Lead, coach, and inspire departmental managers and teams to deliver exceptional guest experiences and operational excellence.
  • Hold department leaders accountable for performance, service standards, productivity, financial outcomes, and compliance.
  • Maintain regular communication with department heads to understand operational challenges, opportunities, staffing requirements, and performance results.
  • Foster a high-performance, collaborative, and guest-focused culture.
  • Conduct performance reviews, support succession planning, and identify coaching and development opportunities.
  • Ensure compliance with company policies, procedures, and workplace standards.

Guest Experience & Service Excellence

  • Champion an exceptional guest experience across every touchpoint of the hotel, including accommodation, restaurant, bar, events, and all guest-facing areas.
  • Maintain awareness of guest feedback, online reputation, service trends, and operational issues across all departments.
  • Ensure consistent service delivery, cleanliness, presentation, and hospitality standards throughout the property.
  • Personally manage escalated guest concerns, VIP requirements, and service recovery situations.
  • Work closely with department leaders to implement improvements that enhance guest satisfaction and loyalty.
  • Drive continuous improvement in guest satisfaction scores, reviews, and brand standards.

Hotel Operations

  • Assume full responsibility for the daily operation and overall performance of the hotel.
  • Ensure seamless coordination between Front Office, Housekeeping, Maintenance, Food & Beverage, Events, and support departments.
  • Maintain a strong understanding of daily operational activity, including occupancy levels, guest movements, restaurant performance, events, staffing, maintenance requirements, and service challenges.
  • Conduct regular operational reviews and property walks to ensure standards are maintained.
  • Monitor operational performance and implement improvements to maximise efficiency, profitability, and guest satisfaction.
  • Ensure the property consistently meets brand, quality, safety, and operational standards.
  • Oversee maintenance planning, capital improvements, and asset protection initiatives.
  • Monitor occupancy, ADR, RevPAR, revenue performance, labour productivity, departmental results, and key operational KPIs.

Food & Beverage Management

  • Take overall ownership and accountability for all Food & Beverage operations, including restaurant, bar, conferencing, events, banqueting, and room service operations where applicable.
  • Maintain strong visibility within Food & Beverage areas and ensure a thorough understanding of daily restaurant operations, guest feedback, service standards, sales performance, staffing, and operational challenges.
  • Ensure the restaurant and F&B operations deliver exceptional guest experiences while achieving revenue, profitability, and quality objectives.
  • Work closely with Food & Beverage leaders and culinary teams to ensure operational consistency and continuous improvement.
  • Monitor service delivery, food quality, beverage standards, presentation, cleanliness, and guest engagement.
  • Drive profitability through effective budgeting, cost control, menu performance, pricing strategies, labour management, and revenue optimisation.
  • Oversee inventory management, purchasing, supplier relationships, stock control, and waste reduction.
  • Review F&B performance, including sales, labour costs, food and beverage costs, guest feedback, and operational KPIs, implementing improvements where required.
  • Ensure compliance with food safety, liquor licensing, hygiene, health, and workplace safety requirements.
  • Lead and develop Food & Beverage teams to deliver service excellence, operational efficiency, and revenue growth.

Staff Scheduling & Workforce Planning

  • Ensure workforce planning supports operational requirements across all departments while optimising labour costs.
  • Oversee departmental staffing levels, including Front Office, Housekeeping, Food & Beverage, Events, and support functions.
  • Ensure managers maintain effective rosters that support guest demand and operational requirements.
  • Monitor attendance, productivity, performance, and staffing effectiveness.
  • Approve leave requests while ensuring appropriate operational coverage.
  • Identify staffing challenges and implement solutions proactively.

Financial & Administrative Management

  • Take ownership of the hotel's operational budgets and overall financial performance.
  • Monitor revenue, expenses, payroll, departmental profitability, and commercial performance across all areas, including Food & Beverage.
  • Review departmental financial results with leaders and implement corrective actions where required.
  • Identify opportunities to improve efficiency, reduce costs, and increase profitability without compromising guest experience.
  • Ensure purchasing controls, reporting processes, and administrative procedures are followed.
  • Provide accurate operational updates and performance reporting to the Executive General Manager.

Inventory & Asset Management

  • Maintain oversight of inventory, operational supplies, equipment, and assets across all hotel departments.
  • Ensure effective stock control within Housekeeping, Guest Services, Food & Beverage, and operational areas.
  • Monitor purchasing practices, supplier performance, stock usage, and waste levels.
  • Ensure hotel assets are maintained, protected, and utilised effectively.

Health, Safety & Compliance

  • Ensure full compliance with health, safety, food safety, hospitality, employment, licensing, and regulatory requirements.
  • Maintain oversight of compliance standards across all departments, including Food & Beverage operations.
  • Lead emergency preparedness, risk management, and workplace safety initiatives.
  • Conduct regular operational audits and ensure corrective actions are implemented.
  • Ensure all teams receive appropriate compliance and safety training.

Strategic Leadership & Business Development

  • Work closely with the Executive General Manager to execute the hotel's strategic objectives.
  • Provide operational insight and recommendations to support business planning, budgeting, forecasting, and decision-making.
  • Identify opportunities to improve profitability, operational efficiency, guest satisfaction, and team performance.
  • Support sales, marketing, events, and local business initiatives to drive occupancy, revenue, and Food & Beverage growth.
  • Lead operational improvement projects, renovations, and change management initiatives.
  • Act on behalf of the Executive General Manager during periods of absence where required.

Key Skills & Qualifications

  • Proven success in a Hotel Manager or senior hospitality leadership role within a full-service hotel environment.
  • Demonstrated ability to lead and oversee multi-department hotel operations.
  • Strong understanding and commercial experience in Food & Beverage operations.
  • Excellent leadership, coaching, and people management skills.
  • Strong financial, commercial, and business acumen.
  • Experience managing budgets, forecasting, labour costs, revenue performance, and operational KPIs.
  • Ability to analyse operational performance and take decisive corrective action.
  • Strong knowledge of hospitality legislation, health and safety, food safety, and compliance requirements.
  • Proficiency in Hotel Property Management Systems (PMS), Point of Sale (POS) systems, and Microsoft Office.
  • Strong decision-making, organisational, communication, and problem-solving skills.
  • Ability to work flexible hours, including weekends and public holidays when required.

Success Measures

The Hotel Manager will be evaluated on:

  • Overall operational performance of the hotel.
  • Guest satisfaction, service quality, and online reputation.
  • Visibility, leadership, and accountability across all hotel departments.
  • Achievement of occupancy, ADR, RevPAR, revenue, and Food & Beverage targets.
  • Restaurant and Food & Beverage performance, profitability, and guest experience.
  • Financial performance, cost management, and operational efficiency.
  • Employee engagement, retention, succession planning, and team development.
  • Compliance with operational, safety, licensing, and brand standards.
  • Maintenance of hotel assets and overall property standards.
  • Successful execution of strategic initiatives agreed with the Executive General Manager.
