About us

The Local Kitchen Co is one of Johannesburg's busiest restaurants. We serve five to six hundred covers a day, seven days a week, with a front-of-house team of more than twenty-five and a kitchen brigade of thirty. It's a big, fast, high-standard operation, and we run it properly.

The role

Reporting to the General Manager, you'll be the senior operational lead on the floor and across the business. You'll lead two front-of-house managers and a team of twenty-five waiters, and work hand in hand with the kitchen so that front and back run as one. This role is for an all-rounder: someone equally credible on the floor, at the pass, and in the numbers.

What you'll be responsible for

• Leading the front-of-house team: two FOH managers and twenty-five waiters
• Running service at volume and keeping floor and kitchen in sync
• Guest experience, complaint handling and service standards
• Rostering, labour cost and shift planning across the floor
• Driving sales, spend per head and upselling
• Cash-up, till control and daily reporting
• Stock, ordering and cost control alongside the Kitchen Manager
• Health-and-safety and hygiene compliance across the site
• Recruiting, training and performance-managing your team
• Stepping up for the General Manager when required

Who we're looking for

We need someone firm and hands-on. With this many covers and this many people, the business needs a manager who sets the standard, holds people to it, and stays calm when the room is full. You lead from the floor, not the office, and your team respects you because you know every job in the building.

You'll bring:

• At least five years in a senior restaurant management role in a high-volume environment
• Strong front-of-house leadership, with solid back-of-house understanding
• Experience managing managers as well as large floor teams
• A good grip on labour cost, GP and P&L basics
• Excellent people skills: firm, fair and consistent
• The stamina for long, busy services and weekend trade
