Full job description

Main responsibilities

  • Manage the daily operation of restaurants and dining venues.
  • Supervise Maître d’, Assistant Maître d’, Head Waiters, Waiters and other restaurant staff.
  • Ensure excellent guest service and dining experiences.
  • Monitor restaurant service, table setup, cleanliness and presentation.
  • Manage seating arrangements, reservations and guest flow.
  • Handle guest complaints and resolve service issues professionally.
  • Conduct staff briefings before service.
  • Prepare staff schedules and allocate duties.
  • Train, coach and evaluate restaurant employees.
  • Monitor food and beverage service standards.
  • Work closely with the Executive Chef and kitchen team to coordinate service.
  • Monitor food and beverage costs, wastage and inventory.
  • Assist with budgets, revenue targets and operational reports.
  • Ensure compliance with HACCP, hygiene, sanitation and safety standards.
  • Conduct regular inspections of dining areas.
  • Manage restaurant operations during formal nights, special events and high-volume services.
  • Ensure company/cruise-line procedures and standards are consistently followed.
  • Coordinate with the Food & Beverage Manager/Director and Hotel Director.

Requirements

  • Several years of restaurant/hotel/cruise experience
  • Previous supervisory or management experience
  • Excellent customer-service and communication skills
  • Knowledge of cost control and inventory
  • Ability to work under pressure
  • Strong English
  • HACCP/food-safety knowledge
  • STCW and seafarer medical certification, where required

Pay: R50 000,00 - R70 000,00 per month
