THE Pretoria Hotel is seeking an experienced, passionate, and service-driven Restaurant, Conference & Events Manager to lead our Food & Beverage and Conference & Events operations.
This is an exciting opportunity for a hands-on hospitality professional who thrives in a fast-paced hotel environment and is committed to delivering outstanding guest experiences. The successful candidate will oversee the daily operations of the restaurant, bar, conference facilities, and banqueting services while driving operational excellence, guest satisfaction, and revenue growth.
Key Responsibilities
Restaurant & Bar Operations
- Manage the day-to-day operations of the hotel's restaurant and bar. Ensure exceptional food and beverage service standards are consistently maintained. Monitor guest satisfaction and professionally resolve complaints and service issues. Develop and implement strategies to increase restaurant sales and profitability. Manage stock control, purchasing, inventory, and cost management. Ensure compliance with food safety, hygiene, health, and safety regulations. Work closely with the Executive Chef to develop menus, promotions, and seasonal offerings.
Conference & Events Management
- Manage all conference, meeting, banqueting, wedding, and special event enquiries and bookings. Meet with clients to discuss event requirements, menus, venue layouts, audiovisual needs, and special requests. Prepare detailed function sheets and communicate event requirements to all operational departments. Coordinate with Front Office, Housekeeping, Kitchen, Maintenance, and Security to ensure successful event execution. Oversee event setup, service delivery, and post-event evaluations. Ensure conference venues and function rooms are maintained to the highest standards.
Leadership & Team Management
- Lead, coach, train, and motivate the restaurant and banqueting teams. Prepare staff schedules and manage labour costs effectively. Conduct performance reviews and address employee relations matters in accordance with company policies. Promote a culture of teamwork, professionalism, and exceptional guest service.
Financial & Operational Management
- Prepare departmental budgets and monitor financial performance. Control food, beverage, and operating costs while maintaining quality standards. Analyse sales trends and implement initiatives to maximise revenue. Prepare daily, weekly, and monthly operational reports. Ensure accurate billing, event reconciliation, and administrative compliance.
Manager on Duty Responsibilities
- Serve as Manager on Duty (MOD) on a rotational basis. Support overall hotel operations and ensure seamless guest service across all departments. Respond effectively to guest concerns and operational challenges.
Minimum Requirements
- Diploma or Degree in Hospitality Management, Hotel Management, Food & Beverage Management, or a related qualification. Minimum of 5 years' management experience in a hotel food and beverage, conference, and banqueting environment. Demonstrated experience managing restaurant operations and coordinating conferences and events. Strong financial management, budgeting, and cost-control skills. Excellent leadership, organisational, and communication skills. Computer literacy, including Microsoft Office and hotel property management systems will be advantageous. Ability to work flexible hours, including weekends, evenings, and public holidays. Valid driver's licence will be advantageous.
