Job Summary

We are seeking an experienced and reliable Night Chef to oversee all evening kitchen operations. The successful candidate will manage the kitchen pass, supervise staff, maintain stock control, improve ingredient quality and kitchen efficiency, and ensure smooth service during night operations. The Night Chef must be confident working across all kitchen sections and capable of leading the team in a fast-paced environment.

Key Responsibilities

  • Operate and control the kitchen pass during service to ensure smooth food flow and quality presentation.
  • Supervise and coordinate all night kitchen operations.
  • Manage and monitor stock levels, inventory rotation, and ordering requirements.
  • Ensure proper storage, handling, and usage of ingredients to minimize waste and control costs.
  • Improve ingredient quality, menu consistency, and food preparation standards.
  • Train, guide, and motivate kitchen staff during night shifts.
  • Maintain high standards of food hygiene, cleanliness, and safety in accordance with health regulations.
  • Work confidently across all kitchen sections including grill, fryer, sauté, prep, plating, and cold section.
  • Ensure all dishes are prepared and served according to restaurant standards.
  • Monitor kitchen performance and implement improvements to increase efficiency and productivity.
  • Assist with menu development, specials, and ingredient innovation when required.
  • Resolve kitchen issues quickly and professionally during service.
  • Maintain accurate stock records, wastage reports, and kitchen documentation.
  • Ensure equipment is used correctly and report maintenance issues promptly.
